JOB SCOPE
The Chef De Partie ensures that the instructions provided for their kitchen section are followed. The team assigned to their station must guarantee that preparations, line management, cooking, food quality, and textures align with the high standards required. The Chef De Partie supervises and trains their team to follow HACCP, Health, and Safety regulations in the kitchen and provides guidance to ensure compliance. They also ensure that food is stored properly to avoid waste and align with food cost. They collaborate with their superiors to ensure that food supplies are always available and consistent with the demands and needs of the workflow. Finally, they are expected to participate in internal kitchen meetings, showing proactivity in proposing new ideas and contributing to discussions.
JOB RESPONSIBILITIES
* Cook and prepare recipes according to the pre-established menu set by superiors
* Train the team on issues such as ingredient cleaning, cooking techniques, line management, and organization of preparations
* Supervise kitchen cleaning at the end of the shift
* Manage kitchen areas, overseeing stock rotation and inventory levels
* Ensure that their team always wears clean, neat, and presentable uniforms to be visible to guests
* Support daily kitchen operations
* Assist in menu planning, inventory, and supply management
* Ensure that hygiene, cleanliness, and order in the kitchen and food counters meet customer satisfaction and company standards, as well as HACCP regulations
* Promote a positive and motivated attitude among all team members
* Any other tasks as requested within the scope of the position
JOB REQUIREMENTS
* Proven previous experience in the role of Chef De Partie (minimum 3 years)
* Mastery and autonomy in managing all preparations
* Good knowledge of classic pastry preparations
* Ability to listen and communicate assertively with subordinates
* Ability to manage relationships with superiors and/or peers
* Highly responsible and reliable
* Good knowledge of the English language
* Ability to work under pressure
* Mastery of HACCP and safety regulations specific to the field
* Willingness to work in shifts, weekends, and holidays
* 5 working days per week
* Work location: Leonardo Da Vinci Fiumicino Airport
