Junior Sous Chef - Pastry Opportunity
An exciting opportunity has arisen for a Junior Sous Chef - Pastry to join the summer season at Jumeirah Capri Palace. This role is perfect for a motivated and experienced individual who is passionate about pastry cuisine.
Main Responsibilities:
* Attend meetings and briefings as instructed by the Head Chef and clearly disseminate relevant information to related teams in a timely manner.
* Inform and keep the Head Chef up-to-date on challenges and irregularities, recommending courses of action.
* Respond positively to change, adapting to the departmental function as dictated by the industry, company, or hotel.
* Interact with colleagues from other departments within areas of responsibility, developing solid working relationships.
* Have a complete understanding and adhere to the company's policy relating to food hygiene and safe food handling practices.
* Have a complete understanding of, and adhere to, culinary standards relating to recipes, preparation methods, and plating standards.
* Liaise with the Stewarding Manager to ensure high standards of cleanliness are maintained in all kitchen areas, such as machinery, small equipment, floors, and fridges.
* Ensure that operating and kitchen equipment is maintained to a good standard with minimal breakage.
* Take responsibility for the quality of incoming produce, ensuring that all food merchandise meets order sheets, receiving records, and purchasing specifications.
* Assist the Head Chef, communicate, and delegate the production schedule for the day, collating quantities to be produced from the forecast and for the next day's operation, to the team with clear and concise details, and follow up.
* E nsure all quality ingredients are accurately ordered.
* Ensure all quality ingredients are professionally prepared in accordance with recipes, plating guides, buffet set ups, with an emphasis on maximizing production time and minimizing waste, to support the culinary team in achieving its financial goals-targets, food cost.
Requirements:
* A minimum of 1-year experience in a Junior Sous Chef position.
* Proficient in Italian and a second language (English preferably) would be an added advantage.
* Gastronomic expertise.
* Teamwork and interpersonal skills.
