Head of Culinary Department / Executive Chef
We are seeking a skilled Executive Chef and Head of Food & Beverage Department to join our Team in HYATT CENTRIC MURANO VENICE!
To lead our food & beverage operations, culinary & stewarding team with a focus on organization and quality. The ideal candidate has worked for an international hotel chain, led an Italian cuisine team, overseen food & beverage operations, and will ensure compliance with HACCP regulations.
Hyatt Centric Murano Venice has 3 Food & Beverage outlets, room service, and banqueting facilities.
The gourmet Ristorante Osteriva is considered the best restaurant on Murano Island, the Laguna side must-go location Caffè Rivalonga and the Spritz & Fizz Cocktail Bar.
Responsibilities:
* Act as the Culinary Leader, leading the food & beverage team in successfully implementing processes and projects, representing the F&B operations towards the outside.
* Ensure compliance with all HACCP and safety regulations.
* Lead budget planning for the food & beverage department and ensure cost-efficient execution of the food & beverage department.
* Oversee staff scheduling, onboarding, training, and supervision of employees and apprentices.
* Be responsible for operating and improving the Food & Beverage department.
* Handle guest requests and respond promptly to complaints.
* Conduct daily inspections of the restaurants, the kitchen, and the stock area.
* Ensure effective collaboration with all relevant departments and participate in meetings and conference calls.
Qualifications & Skills:
* Completed Culinary training.
* Professional experience in a similar role, Executive Sous Chef role, or F&B Manager role with Chef’s background.
* Ability to work independently with a strong attention to quality.
* Strengths include flexibility, commitment and driving change.
* Open-minded, innovative, and able to contribute new ideas to daily operations.
* Resilient and able to stay calm under pressure.
* Hotel operates the full year but with seasonal differences; having worked in a seasonal environment is a plus.
* Good Italian and English language.
